Main Ingredients:

  • 1 tablespoon olive oil
  • 1 pound smoked sausage or kielbasa, sliced into rounds
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup barbecue sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional:

  • 1/2 cup shredded cheddar cheese
  • 2 green onions, sliced for garnish

Instructions

  1. Heat the Skillet: Heat olive oil in a large deep skillet over medium-high heat.
  2. Cook Sausage: Add sausage and cook until browned, about 4–5 minutes.
  3. Add Vegetables: Stir in onion, bell pepper, and garlic, cooking until softened, about 3 minutes.
  4. Toast Rice: Add rice and toast for 1–2 minutes.
  5. Add Liquid & Seasoning: Stir in chicken broth, barbecue sauce, tomato paste, brown sugar, smoked paprika, salt, and pepper.
  6. Simmer: Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender.
  7. Finish & Serve: Remove from heat, stir in cheddar cheese (if using), garnish with green onions, and serve warm.

Notes

  • For extra spice, consider adding a diced jalapeño or a pinch of cayenne pepper.
  • This dish can be made with leftover chicken or shrimp instead of sausage.
