Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade)

Additional Ingredients:

  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 2 ½ cups beef broth
  • 2 cups uncooked pasta shells or rotini
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • Chopped cilantro and sour cream for garnish (optional)

Instructions

  1. Cook Ground Beef Mixture: In a large skillet, cook ground beef and onion until browned. Add garlic and taco seasoning, cook until fragrant.
  2. Add Remaining Ingredients: Stir in tomatoes, corn, tomato paste, broth, and pasta. Bring to a boil.
  3. Simmer: Reduce heat, cover, and simmer for 12–15 minutes until pasta is tender.
  4. Finish: Remove from heat, stir in cheeses until melted. Season with salt and pepper.
  5. Serve: Garnish with cilantro and sour cream. Enjoy!
