Ground Beef Mixture:
- 1 pound ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade)
Additional Ingredients:
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn kernels (fresh, canned, or frozen)
- 2 ½ cups beef broth
- 2 cups uncooked pasta shells or rotini
- 1 cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- 2 tablespoons tomato paste
- Salt and pepper to taste
- Chopped cilantro and sour cream for garnish (optional)
Instructions
- Cook Ground Beef Mixture: In a large skillet, cook ground beef and onion until browned. Add garlic and taco seasoning, cook until fragrant.
- Add Remaining Ingredients: Stir in tomatoes, corn, tomato paste, broth, and pasta. Bring to a boil.
- Simmer: Reduce heat, cover, and simmer for 12–15 minutes until pasta is tender.
- Finish: Remove from heat, stir in cheeses until melted. Season with salt and pepper.
- Serve: Garnish with cilantro and sour cream. Enjoy!

- To make it spicier, add cayenne or hot sauce.
- Ground turkey or plant-based crumbles can be used for a lighter or vegetarian version.
