Chicken Parmesan Pasta:
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breast (cut into bite-sized pieces)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 3 cloves garlic (minced)
- 3 cups chicken broth
- 2 cups marinara sauce
- 12 ounces penne pasta (uncooked)
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ¼ cup chopped fresh basil (optional)
- ½ teaspoon red pepper flakes (optional)
Instructions
- Heat the olive oil and cook chicken: Heat olive oil in a pot, add chicken, season with salt, pepper, and Italian seasoning. Cook until browned.
- Add garlic and sauce: Add minced garlic, then pour in chicken broth and marinara sauce.
- Combine pasta: Stir in uncooked pasta and bring to a boil. Simmer covered until pasta is cooked.
- Melt cheese and serve: Remove from heat, stir in mozzarella and Parmesan cheeses until melted. Top with basil and red pepper flakes.
Notes
- You can use chicken thighs instead of chicken breasts.
- For a crispier topping, broil with extra Parmesan for 2–3 minutes.
