- 1 tablespoon olive oil
- 14 oz smoked kielbasa sausage, sliced into ½-inch rounds
- 1½ lbs baby potatoes, quartered or halved
- 1 small onion, chopped
- 1 bell pepper (any color), chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- ½ teaspoon dried thyme
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Heat olive oil: Heat olive oil in a large skillet over medium heat.
- Cook kielbasa: Add sliced kielbasa and cook for 4–5 minutes until browned. Remove and set aside.
- Cook potatoes: In the same skillet, cook potatoes for 10–12 minutes until they begin to soften and brown.
- Add vegetables: Add onion and bell pepper and cook for another 5 minutes. Stir in garlic, smoked paprika, thyme, salt, and pepper.
- Combine and cook: Return kielbasa to the skillet, cover, and cook for 5–7 minutes until potatoes are fork-tender and everything is heated through.
- Garnish and serve: Garnish with parsley before serving, if desired.
Notes
- To speed up cooking, parboil potatoes for 5 minutes before adding to the skillet.
- If needed, add a splash of broth or water and cover the skillet to steam for additional cooking time.
- This recipe can be adapted with sweet potatoes or other root vegetables for variety.
