Ingredients:

  • 4 large yellow onions (peeled and halved)
  • 4 cups water
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons butter
  • 2 garlic cloves (smashed)
  • 2 sprigs fresh thyme or ½ teaspoon dried thyme
  • Optional: 1 teaspoon apple cider vinegar or lemon juice for added brightness

Instructions

  1. In a large pot, combine the halved onions, water, salt, pepper, butter, garlic, and thyme. Bring the mixture to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low and simmer uncovered for 25–30 minutes, or until the onions are tender and fragrant.
  3. Stir in vinegar or lemon juice if using, and adjust seasoning to taste.
  4. Serve warm as a side dish or broth, or use in soups and stews for added flavor.
