- 1 pound ground chicken
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 1 tablespoon soy sauce
- ¼ cup hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon Sriracha (optional)
- 1 (8-ounce) can water chestnuts, drained and finely chopped
- 2 green onions, thinly sliced
- Salt and pepper to taste
- 1 head butter lettuce or iceberg lettuce, leaves separated

- Heat vegetable oil in a large skillet over medium-high heat. Add ground chicken and cook until browned, about 5–6 minutes, breaking it up with a spatula as it cooks. Drain any excess fat.
- Add the diced onion and cook for 2–3 minutes until softened. Stir in the garlic and ginger and cook for another minute.
- Add the soy sauce, hoisin sauce, rice vinegar, sesame oil, and Sriracha, stirring to coat the chicken mixture evenly. Stir in the chopped water chestnuts and green onions.
- Cook for another 1–2 minutes until heated through. Season with salt and pepper to taste. Remove from heat and serve by spooning the chicken mixture into individual lettuce leaves.
Notes
- For a low-sodium version, use reduced-sodium soy sauce and hoisin.
- You can also substitute ground turkey or plant-based meat alternatives for the chicken.
- Serve with extra hoisin or Sriracha on the side for dipping.
