Parmesan Crusted Potatoes:
- 2 pounds baby potatoes (halved)
- 3 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Mix Parmesan mixture: In a medium bowl, mix the Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Coat potatoes: Toss the halved potatoes in olive oil until well coated. Press the cut side of each potato into the Parmesan mixture.
- Bake: Place potatoes cut-side down on the baking sheet and bake for 30–35 minutes until golden and crispy.
- Finish and serve: Let cool for 5 minutes, garnish with parsley if desired, and serve warm.
Notes
- For even crispier potatoes, use a cast iron skillet instead of a baking sheet.
