Fish Nuggets:

  • 1 1/2 pounds white fish fillets (such as cod, tilapia, or haddock), cut into 2-inch chunks

Breading:

  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup breadcrumbs (panko preferred)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional:

  • 2 tablespoons olive oil or melted butter (for drizzling)
  • lemon wedges and fresh parsley for serving

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare the fish: Pat fish pieces dry with paper towels.
  3. Set up breading station: Place flour in one shallow bowl, beaten eggs in another, and in a third bowl combine breadcrumbs, Parmesan, garlic powder, paprika, salt, and black pepper.
  4. Bread the fish: Dredge each fish piece first in flour, then dip into egg, and finally coat with the Parmesan breadcrumb mixture.
  5. Bake: Arrange the coated nuggets on the prepared baking sheet, drizzle with olive oil or melted butter, and bake for 12 to 15 minutes, flipping halfway, until golden brown and fish flakes easily with a fork.
  6. Serve: Serve warm with lemon wedges and parsley.

Notes

  • These nuggets can also be air-fried at 400°F (200°C) for 8 to 10 minutes.
  • For extra crunch, use only panko breadcrumbs.
