Dough:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Filling:

  • 1 cup diced fresh or canned peaches (drained if using canned)
  • 1/4 cup peach preserves or jam

Additional:

  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and lightly grease a 12-cup muffin tin.
  2. Mix wet ingredients: Cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. Combine wet and dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Form dough in muffin tin: Scoop about 2 tablespoons of dough into each muffin cup and press to form a shallow well in the center.
  6. Prepare filling: Mix the diced peaches with the peach preserves. Spoon about 1 tablespoon of the peach mixture into the center of each cookie cup.
  7. Bake: Bake for 14–16 minutes, or until the edges are golden and the centers are set.
  8. Cool and serve: Allow to cool in the tin for 10 minutes before carefully removing. Dust with powdered sugar if desired.

  • You can use frozen peaches (thawed and drained) if fresh aren’t in season.
