Ingredients

Scale

For the cake:

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or plain yogurt
  • 1 ½ cups fresh or canned diced peaches (well-drained if using canned)

For the brown sugar frosting:

  • 1/4 cup unsalted butter
  • 1/2 cup packed light brown sugar
  • 2 tablespoons milk or cream
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. Cream the butter and sugar: In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add wet ingredients: Add the eggs one at a time, then mix in the vanilla and sour cream.
  5. Combine dry and wet ingredients: Gradually add the dry ingredients to the wet, mixing just until combined. Fold in the diced peaches.
  6. Bake: Spread the batter evenly in the prepared pan and bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Make the frosting: Melt the butter in a small saucepan, stir in the brown sugar, cook until bubbly, then whisk in the milk. Let cool, stir in powdered sugar and vanilla, beat until smooth.
  8. Frost the cake: Spread the frosting over the cooled cake and let set before slicing.

Notes

  • For extra flavor, add a pinch of nutmeg or chopped pecans to the batter.
  • Store the cake covered at room temperature for up to 2 days or refrigerate for longer freshness.
