Instructions

  1. Preheat the Oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until fully combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  4. Add Peaches and Chips: Gently fold in the diced peaches and white chocolate chips, if using.
  5. Bake: Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing about 2 inches apart. Sprinkle with crushed graham crackers, if desired. Bake for 11–13 minutes or until the edges are lightly golden and the centers are set.
