Cookie Dough:

Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Wet Ingredients: In a large mixing bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until smooth.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry mixture to the wet ingredients and mix until a soft dough forms.
- Form Cookies: Scoop tablespoon-sized portions of dough, roll into balls, and place on the prepared baking sheet about 2 inches apart. Make an indentation in the center of each cookie and fill with jelly.
- Bake: Bake for 10 to 12 minutes until lightly golden. Cool on the baking sheet before transferring to a wire rack.
