Filling:

  • 1/2 cup strawberry or grape jelly

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Wet Ingredients: In a large mixing bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until smooth.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry mixture to the wet ingredients and mix until a soft dough forms.
  4. Form Cookies: Scoop tablespoon-sized portions of dough, roll into balls, and place on the prepared baking sheet about 2 inches apart. Make an indentation in the center of each cookie and fill with jelly.
