For Brownie Swirl:

  • 1/2 cup brownie mix (dry)
  • 1 tbsp milk (as needed)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the ingredients: In a large bowl, cream the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet until a soft dough forms.
  4. Prepare the swirl dough: Divide the dough in half. Mix the dry brownie mix into one half of the dough, adding 1 tablespoon of milk if needed to help combine.
  5. Create swirl cookies: Pinch off small amounts of each dough and gently swirl or marble them together by hand to form 1.5-inch dough balls. Place the dough balls on prepared baking sheets about 2 inches apart.
  6. Bake: Bake for 10–12 minutes, or until edges are set and centers are slightly soft. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
