For the filling:

  • 1/4 cup creamy peanut butter
  • 2 tablespoons unsalted butter, softened
  • 3/4 cup powdered sugar
  • 12 teaspoons milk or cream, as needed for spreading consistency

Instructions

  1. Preheat oven and prepare baking sheets: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Prepare cookie dough: Cream together butter, peanut butter, sugars, egg, and vanilla. In a separate bowl, whisk flour, baking soda, baking powder, and salt. Combine wet and dry ingredients.
  3. Bake cookies: Scoop dough into balls, flatten with a fork, and bake for 8–10 minutes until lightly golden. Cool on a wire rack.
