  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Pecan Filling:

  • 1½ cups finely chopped pecans
  • ½ cup light corn syrup
  • ⅓ cup packed brown sugar
  • 2 tablespoons heavy cream
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Prepare Cookie Dough: Cream together butter, granulated sugar, and brown sugar. Beat in egg and vanilla. Whisk together flour, baking powder, and salt. Combine wet and dry ingredients.
  3. Shape Cookies: Roll dough into balls, make an indentation, and place on baking sheets.
  4. Make Pecan Filling: Cook pecans, corn syrup, brown sugar, cream, and salt until bubbling. Stir in vanilla.
  5. Fill Cookies: Spoon pecan filling into each cookie.
