Pecan Filling:
- 1½ cups finely chopped pecans
- ½ cup light corn syrup
- ⅓ cup packed brown sugar

- ½ teaspoon vanilla extract
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Prepare Cookie Dough: Cream together butter, granulated sugar, and brown sugar. Beat in egg and vanilla. Whisk together flour, baking powder, and salt. Combine wet and dry ingredients.
- Shape Cookies: Roll dough into balls, make an indentation, and place on baking sheets.
- Make Pecan Filling: Cook pecans, corn syrup, brown sugar, cream, and salt until bubbling. Stir in vanilla.
- Fill Cookies: Spoon pecan filling into each cookie.
- Bake: Bake for 12-15 minutes until golden.
