- 2 pounds beef sirloin or flank steak, thinly sliced into strips
- 2 tablespoons vegetable oil
- 1 medium onion, sliced
- 3 bell peppers (red, green, or yellow), sliced into strips
- 3 cloves garlic, minced
- 1/2 cup low-sodium soy sauce
- 1/4 cup beef broth
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 tablespoon cold water
- 1 teaspoon ground black pepper
- 1/2 teaspoon ground ginger

Instructions
- Heat the Vegetable Oil: Heat the vegetable oil in a large skillet over medium-high heat.
- Sear the Beef: Quickly sear the beef strips in batches for about 2-3 minutes until just browned.
- Transfer to Crock Pot: Transfer the seared beef to a 6-quart crock pot.
- Add Vegetables: Add the sliced onion, bell peppers, and minced garlic on top of the beef.
- Prepare Sauce: In a small bowl, whisk together the soy sauce, beef broth, brown sugar, black pepper, and ground ginger.
- Cook in Crock Pot: Pour the sauce over the beef and vegetables in the crock pot. Cover and cook on low for 5-6 hours or on high for 2-3 hours.
- Thicken Sauce: In a small bowl, mix the cornstarch with cold water until smooth. Stir the slurry into the crock pot during the last 30 minutes of cooking to thicken the sauce.
- Serve: Serve the pepper steak over cooked rice and garnish with chopped green onions if desired.
Notes
- For extra flavor, add a splash of oyster sauce or hoisin sauce to the cooking liquid.
