Chicken:

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil, divided
  • Salt and black pepper to taste

Cauliflower Rice:

  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 4 cups cauliflower rice (fresh or frozen)
  • ¼ cup chicken broth or water

Additional:

  • â…“ cup prepared pesto (store-bought or homemade)
  • ½ cup cherry tomatoes, halved
  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the Chicken: In a large skillet, heat 1 tablespoon olive oil over medium heat. Season chicken with salt and pepper, then add to the skillet. Cook for 6–8 minutes until browned and fully cooked. Remove from skillet.
  2. Sauté Vegetables: In the same skillet, heat remaining tablespoon of olive oil. Add garlic and onion, cook for 2–3 minutes until softened. Stir in cauliflower rice and cook for 5–6 minutes until tender. Add chicken broth and cook until liquid is mostly absorbed.
  3. Combine Ingredients: Return chicken to the skillet. Stir in pesto and cherry tomatoes, cook until warmed through. Remove from heat and top with Parmesan and basil.
