For the Skillet Dinner:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 (14 oz) package smoked kielbasa, sliced into rounds
  • 1 (16 oz) package frozen pierogies (potato and cheese recommended)
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth or water
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)


Instructions

  1. Heat Skillet: Heat olive oil and butter in a large skillet over medium heat.
  2. Cook Kielbasa: Add sliced kielbasa and cook for 4-5 minutes until browned; then remove and set aside.
  3. Cook Pierogies: In the same skillet, cook frozen pierogies for 4-5 minutes per side until golden and heated through.
  4. Add Vegetables: Add onion and bell pepper, cook until softened, then stir in garlic for 30 seconds.
  5. Combine Ingredients: Return kielbasa to the skillet, add chicken broth, paprika, salt, and pepper. Cover and simmer for 3-4 minutes.
  6. Serve: Garnish with parsley if desired and enjoy!
