Graham Cracker Crust:

- 1/4 cup granulated sugar
Cream Cheese Layer:
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup powdered sugar
- 1 (8-ounce) container whipped topping, thawed and divided
Pineapple Coconut Layer:
- 1 (20-ounce) can crushed pineapple, well drained
- 1 (3.4-ounce) package instant coconut cream pudding mix
- 1 cup cold milk
- 1/2 cup shredded sweetened coconut, toasted
- Maraschino cherries for garnish (optional)
Instructions
- Graham Cracker Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press firmly into the bottom of a 9×13-inch baking dish to form the crust.
- Cream Cheese Layer: In a large bowl, beat cream cheese and powdered sugar until smooth. Fold in 1 cup of whipped topping. Spread over the crust.
- Pineapple Coconut Layer: Mix pudding mix with cold milk until thickened. Stir in drained crushed pineapple. Spread over the cream cheese layer.
- Top with remaining whipped topping, toasted coconut, and cherries. Refrigerate for at least 4 hours before serving.
Notes
- For a stronger tropical flavor, add 1 tablespoon of rum extract to the pudding mixture.
- This dessert is best made a day ahead to let the layers set. Keep chilled until ready to serve.
