  • 1/2 cup powdered sugar
  • 1 (8-ounce) container whipped topping, thawed and divided

Pineapple Coconut Layer:

  • 1 (20-ounce) can crushed pineapple, well drained
  • 1 (3.4-ounce) package instant coconut cream pudding mix
  • 1 cup cold milk
  • 1/2 cup shredded sweetened coconut, toasted
  • Maraschino cherries for garnish (optional)

Instructions

  1. Graham Cracker Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press firmly into the bottom of a 9×13-inch baking dish to form the crust.
  2. Cream Cheese Layer: In a large bowl, beat cream cheese and powdered sugar until smooth. Fold in 1 cup of whipped topping. Spread over the crust.
  3. Pineapple Coconut Layer: Mix pudding mix with cold milk until thickened. Stir in drained crushed pineapple. Spread over the cream cheese layer.
  4. Top with remaining whipped topping, toasted coconut, and cherries. Refrigerate for at least 4 hours before serving.

Notes

  • For a stronger tropical flavor, add 1 tablespoon of rum extract to the pudding mixture.
