Description

Indulge in the tropical flavors of this Pineapple Cream Cheese Pound Cake. A moist and decadent dessert that combines the richness of cream cheese with the sweetness of crushed pineapple, perfect for any occasion.

Ingredients

Scale

Cake:

  • 1 1/2 cups unsalted butter (softened)
  • 1 (8 oz) package cream cheese (softened)
  • 3 cups granulated sugar
  • 6 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup crushed pineapple (well-drained)
  • 1/2 cup pineapple juice (reserved from crushed pineapple or canned juice)

Instructions

  1. Preheat the oven: Preheat the oven to 325°F and grease and flour a 10-inch bundt or tube pan.
  2. Cream butter, cream cheese, and sugar: In a large bowl, cream the butter, cream cheese, and sugar together until light and fluffy, about 3–4 minutes.
  3. Add eggs and vanilla: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Alternate additions: Gradually add the dry ingredients to the wet mixture, alternating with the pineapple juice, beginning and ending with the flour.
  6. Add pineapple: Gently fold in the crushed pineapple.
  7. Bake: Pour the batter into the prepared pan and bake for 75–85 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool and serve: Let the cake cool in the pan for 15 minutes, then turn it out onto a wire rack to cool completely before slicing.

Notes

  • For extra pineapple flavor, drizzle the cooled cake with a simple glaze made of powdered sugar and pineapple juice.
  • Store leftovers covered at room temperature for up to 3 days or refrigerate for up to a week.
