Ingredients

Scale

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Wet Ingredients:

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple with juice (canned)

Optional:

  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup shredded coconut

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, salt, and cinnamon.
  3. Combine Wet Ingredients: In another bowl, beat the eggs, oil, vanilla, and crushed pineapple with juice until combined.
  4. Combine Mixtures: Add the wet mixture to the dry ingredients and stir gently until just combined.
  5. Add Optional Ingredients: Fold in nuts and coconut if using.
  6. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 55 to 65 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool and Serve: Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra flavor, add a dash of nutmeg or ginger.
  • This bread freezes well when wrapped tightly.
  • You can drizzle a simple glaze made with powdered sugar and pineapple juice over the cooled loaf for added sweetness.
