Blondie Layers:
- 1 cup unsalted butter, melted
- 1½ cups light brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract

- 1 cup shelled pistachios, roughly chopped
Assembly:
- 1 pint vanilla or pistachio ice cream, slightly softened
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- Mix wet ingredients: In a large bowl, whisk melted butter and brown sugar until smooth. Add eggs and vanilla, mix well.
- Add dry ingredients: Stir in flour, baking powder, and salt until combined. Fold in pistachios.
- Bake blondies: Spread batter in the pan, bake for 22–25 minutes until edges are golden. Cool completely.
- Assemble: Cut blondies in half horizontally. Spread softened ice cream on one half, top with the other half.
- Freeze: Press gently, freeze for at least 4 hours.
