For the Filling:

  • 4 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • 3/4 cup powdered sugar
  • 2 tablespoons finely ground pistachios (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the cookie dough: Cream together butter, granulated sugar, and brown sugar until light and fluffy. Add egg, vanilla, and espresso powder. In a separate bowl, whisk flour, baking soda, and salt. Combine wet and dry ingredients, then fold in pistachios.
  3. Bake the cookies: Scoop dough into balls, flatten, and bake for 8–10 minutes. Cool on a wire rack.
  4. Make the filling: Beat cream cheese and butter until smooth. Add vanilla, powdered sugar, and ground pistachios if desired.
