- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1/4 cup milk
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together the flour, chopped pistachios, baking powder, and salt.
- Combine wet ingredients: In a separate large bowl, whisk the granulated sugar, brown sugar, eggs, Greek yogurt, oil, lemon zest, lemon juice, and vanilla extract until smooth.
- Combine wet and dry mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the milk, and stir until just combined. Do not overmix.
- Bake: Pour the batter into the prepared loaf pan and bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
