Ingredients
Scale
Shortbread:
- 1 cup unsalted butter (softened)
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ¼ teaspoon salt
Topping:
- ½ cup shelled pistachios (chopped)
- Powdered sugar for dusting (optional)
Instructions
- Preheat: Preheat the oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
- Cream Butter and Sugar: In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. Mix in the vanilla extract.
- Add Dry Ingredients: Gradually add the flour and salt, mixing just until a soft dough forms. Fold in the chopped pistachios.
- Bake: Press the dough evenly into the prepared baking pan, smoothing the top with a spatula. Use a fork to prick the surface lightly. Bake for 35 to 40 minutes, or until the edges are just turning golden.
- Cool and Serve: Let cool completely in the pan before lifting out and slicing into bars. Dust with powdered sugar before serving, if desired.
Notes
- For a festive touch, use roasted and lightly salted pistachios and add a drizzle of white chocolate over cooled bars.
- These store well in an airtight container for up to one week.
