Description

Indulge in the nostalgic flavors of childhood with these Poptart Cookie Bars. A delightful combination of chewy cookie dough, sweet strawberry jam, and chunks of frosted Pop-Tarts, topped with a vanilla glaze and rainbow sprinkles.

Cookie Bars:

  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 34 frosted strawberry Pop-Tarts, chopped
  • ¾ cup white chocolate chips
  • ½ cup strawberry jam

Glaze:

  • 1 cup powdered sugar
  • 12 tablespoons milk
  • ½ teaspoon vanilla extract
  • rainbow sprinkles (optional)

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and grease lightly.
  2. Prepare dough: Cream softened butter with sugars until light and fluffy. Beat in eggs and vanilla. Whisk flour, baking soda, and salt in a separate bowl. Mix dry ingredients into wet until just combined. Fold in Pop-Tarts and white chocolate chips.
  3. Assemble bars: Press half of the dough into the pan. Spread strawberry jam over it. Top with remaining dough.
  4. Bake: Bake for 25–30 minutes until golden and a toothpick comes out mostly clean. Cool completely.
  5. Make glaze: Whisk powdered sugar, milk, and vanilla. Drizzle over cooled bars and add sprinkles. Let set before slicing.
