Cookie Bars:
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- ¾ cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3–4 frosted strawberry Pop-Tarts, chopped
- ¾ cup white chocolate chips
- ½ cup strawberry jam
Glaze:
- 1 cup powdered sugar
- 1–2 tablespoons milk
- ½ teaspoon vanilla extract
- rainbow sprinkles (optional)
Instructions
- Preheat oven: Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and grease lightly.
- Prepare dough: Cream softened butter with sugars until light and fluffy. Beat in eggs and vanilla. Whisk flour, baking soda, and salt in a separate bowl. Mix dry ingredients into wet until just combined. Fold in Pop-Tarts and white chocolate chips.
- Assemble bars: Press half of the dough into the pan. Spread strawberry jam over it. Top with remaining dough.
- Bake: Bake for 25–30 minutes until golden and a toothpick comes out mostly clean. Cool completely.
- Make glaze: Whisk powdered sugar, milk, and vanilla. Drizzle over cooled bars and add sprinkles. Let set before slicing.
