Potatoes O’Brien:
- 2 tablespoons vegetable oil or butter
- 1 1/2 lbs russet potatoes (peeled and diced small)
- 1 small onion (diced)
- 1 small red bell pepper (diced)
- 1 small green bell pepper (diced)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped fresh parsley for garnish (optional)
Instructions
- Heat the oil or butter: In a large skillet over medium heat.
- Add onion and peppers: Add the diced onion and bell peppers. Season with garlic powder, salt, and black pepper.
- Garnish and serve: Remove from heat and garnish with fresh parsley if desired. Serve hot as a side for breakfast or dinner.
Add the diced potatoes and cook for 10–12 minutes, stirring occasionally until they begin to soften and lightly brown.
Continue cooking for another 8–10 minutes, stirring often until the potatoes are golden and the vegetables are tender.
Notes
- For crispier potatoes, don’t stir too often—let them brown between turns.
- You can also parboil the potatoes for faster cooking.
