Wet Ingredients:

  • 1 3/4 cups milk
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/4 cup melted unsalted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C) and grease an 8-inch square baking dish.
  2. Mix Dry Ingredients: In a large bowl, mix oats, brown sugar, baking powder, pumpkin pie spice, cinnamon, and salt.
