Graham Cracker Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
Cheesecake Filling:
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice
Additional:
- 1 1/2 cups fresh raspberries
- 2 tablespoons raspberry jam (optional for swirling)
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 8 minutes.
- Make the Filling: Beat cream cheese until smooth, add sugar, eggs, vanilla, and lemon juice. Pour over crust.
- Add Raspberries: Scatter raspberries over the filling. Drizzle and swirl with raspberry jam if desired.
- Bake: Bake for 30-35 minutes until edges are set and the center is slightly jiggly.
- Cool and Chill: Cool completely, then chill in the refrigerator for at least 3 hours.
- Serve: Lift bars out, slice, and serve chilled.
Notes
- For extra flavor, drizzle with melted white chocolate before serving.
