Description

Cheesecake Filling:

  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice

Additional:

  • 1 1/2 cups fresh raspberries
  • 2 tablespoons raspberry jam (optional for swirling)

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 8 minutes.
  3. Make the Filling: Beat cream cheese until smooth, add sugar, eggs, vanilla, and lemon juice. Pour over crust.
