- 1½ cups long-grain white rice

- 1 (15 oz) can red kidney beans (drained and rinsed)
- 1 (14.5 oz) can diced tomatoes (with juice)
- 3 cups vegetable broth or chicken broth
- 1 teaspoon smoked paprika
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 2 green onions (sliced, for garnish)
- Chopped fresh parsley (optional)
Instructions
- Prepare the Base: In a large pot or Dutch oven, heat olive oil over medium heat. Add the onion, bell pepper, and celery, and sauté until softened, about 5–7 minutes.
- Add Aromatics and Rice: Stir in the garlic and cook for 1 more minute. Add the rice and stir to coat with the vegetables and oil.
- Incorporate Remaining Ingredients: Mix in the kidney beans, diced tomatoes with juice, broth, smoked paprika, thyme, oregano, cayenne, salt, and black pepper.
- Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes, or until the rice is tender and liquid is absorbed.
- Rest and Serve: Remove from heat and let rest for 5 minutes before fluffing with a fork. Garnish with green onions and parsley before serving.
Notes
- Add cooked andouille sausage or shredded chicken for a heartier version.
- Use brown rice for extra fiber, but adjust cook time accordingly.
