These Reese’s Peanut Butter Chocolate Chip Cookie Bites are a delightful treat that combines the irresistible flavors of peanut butter, chocolate chips, and mini Reese’s Peanut Butter Cups in a bite-sized form.

  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup mini chocolate chips

Topping:

  • 24 mini Reese’s Peanut Butter Cups (unwrapped)

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F and lightly grease a mini muffin pan.
  2. Mix Wet Ingredients: Cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet mixture, fold in chocolate chips.
  4. Bake: Scoop dough into muffin cups, bake for 10-12 minutes until golden. Press one Reese’s cup into each bite immediately after baking.
  5. Cool and Serve: Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
