- 1/2 Cup Heavy Cream (or milk for a lighter version)
- 1 teaspoon Salt (to taste)
- 1/2 teaspoon Black Pepper (to taste)

- 1 tbsp Fresh Herbs (optional): chopped chives, parsley, or thyme
Instructions
- Prepare the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the bulb of garlic to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft and caramelized.
- Prepare the Potatoes: While the garlic is roasting, peel and cut the potatoes into even chunks about 1-2 inches in size. Place the potatoes in a large pot and cover with cold, salted water.
- Boil the Potatoes: Bring the pot to a boil over medium-high heat. Cook the potatoes until they are fork-tender, which typically takes 15-20 minutes. Drain the potatoes in a colander once done.
- Mash the Potatoes: Return the drained potatoes to the pot. Use a potato masher or ricer to mash the potatoes until smooth and lump-free.
- Add the Ingredients: Squeeze the soft roasted garlic cloves out of their skins directly into the mashed potatoes. Add the butter and heavy cream to the mixture.
- Mix and Season: Stir everything together until well combined. Season with salt and black pepper to your taste.
- Adjust Consistency: If you prefer creamier mashed potatoes, gradually add more cream or milk until the desired consistency is reached.
- Finish and Serve: Fold in any fresh herbs if using for added flavor. Transfer the mashed potatoes to a serving dish and enjoy warm.
