Main Ingredients:
- 2 ripe mangoes (peeled, pitted, and roughly chopped)
- 1–2 habanero peppers (stemmed and halved)
- 1 red bell pepper (quartered)
- 1/2 small red onion (quartered)
- 2 cloves garlic (peeled)
Additional Ingredients:
- 1 tablespoon olive oil
- juice of 1 lime
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C).
- Roast the ingredients: On a baking sheet, toss mango, habanero peppers, red bell pepper, onion, and garlic with olive oil. Roast for 15–18 minutes until lightly charred.
- Cool and blend: Let the roasted ingredients cool slightly. Transfer to a food processor, add lime juice, cilantro, salt, and cumin. Pulse until desired consistency.
- Adjust and chill: Taste the salsa, adjust seasoning as needed. Chill for at least 30 minutes before serving.
Notes
- Start with one habanero for milder heat.
- Great with grilled meats, tacos, or chips.
