Main Ingredients:

  • 2 ripe mangoes (peeled, pitted, and roughly chopped)
  • 1–2 habanero peppers (stemmed and halved)
  • 1 red bell pepper (quartered)
  • 1/2 small red onion (quartered)
  • 2 cloves garlic (peeled)

Additional Ingredients:

  • 1 tablespoon olive oil
  • juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C).
  2. Roast the ingredients: On a baking sheet, toss mango, habanero peppers, red bell pepper, onion, and garlic with olive oil. Roast for 15–18 minutes until lightly charred.
  3. Cool and blend: Let the roasted ingredients cool slightly. Transfer to a food processor, add lime juice, cilantro, salt, and cumin. Pulse until desired consistency.
  4. Adjust and chill: Taste the salsa, adjust seasoning as needed. Chill for at least 30 minutes before serving.
