These Rotel Cream Cheese Sausage Balls are a perfect party appetizer or snack. Packed with flavor from spicy sausage, creamy cheese, and a hint of Rotel tomatoes, they are easy to make and disappear quickly!

Ground Pork Sausage Mixture:
- 1 pound ground pork sausage (mild or spicy)
- 1 (10-ounce) can Rotel diced tomatoes with green chilies, well drained
- 8 ounces cream cheese, softened
- 1 1/2 cups shredded sharp cheddar cheese
- 1 1/4 cups all-purpose baking mix (such as Bisquick)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
Instructions
- Preheat and Prepare: Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.
- Mix Ingredients: In a large bowl, combine sausage, drained Rotel, and cream cheese. Add cheddar cheese, baking mix, garlic powder, onion powder, and black pepper. Mix until fully combined.
- Form Balls: Shape mixture into 1 to 1 1/2-inch balls and place on baking sheet.
- Bake: Bake for 20–25 minutes until golden brown and cooked through. Cool slightly before serving.
Notes
- Thoroughly drain Rotel to avoid excess moisture.
- Sausage balls can be frozen raw and baked later.
- Serve with ranch dressing, spicy mayo, or favorite dipping sauce.
