Pecan Topping:
- 1 cup light brown sugar, packed
- 1/3 cup all-purpose flour
- 1 cup chopped pecans
- 1/3 cup unsalted butter, melted
Instructions
- Preheat oven and prepare baking dish: Preheat oven to 350°F and grease a 9×13-inch baking dish.
- Mix sweet potato mixture: In a large bowl, combine mashed sweet potatoes, granulated sugar, salt, vanilla extract, beaten eggs, and melted butter. Mix until smooth.
- Spread sweet potato mixture: Pour the mixture into the prepared baking dish and spread evenly.
- Prepare pecan topping: In a separate bowl, mix brown sugar, flour, chopped pecans, and melted butter until crumbly.
- Top and bake: Sprinkle pecan topping evenly over the sweet potatoes. Bake for 30–35 minutes until golden and crisp. Cool before serving.
