Apple Filling:

  • 2 medium apples, peeled and finely chopped
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon butter
  • ¾ cup salted caramel sauce, plus extra for drizzling
  • Flaky sea salt for garnish

Instructions

  1. Preheat and Prepare: Preheat oven to 325°F (163°C) and grease a 9-inch springform pan. Mix graham cracker crumbs, sugar, and melted butter; press into pan. Bake for 10 minutes and cool.
  2. Prepare Apple Filling: Sauté apples, brown sugar, cinnamon, and nutmeg in butter until caramelized. Cool.
  3. Make Cheesecake Filling: Beat cream cheese, sugar, and vanilla. Add eggs one at a time, then mix in sour cream, flour, and salt. Fold in half of the sautéed apples.
  4. Assemble and Bake: Pour half of the batter over crust, drizzle with caramel sauce, add rest of batter. Bake for 60–70 minutes until set. Cool in oven, then chill for at least 4 hours.
  5. Serve: Top with remaining apples, caramel sauce, and sea salt before serving.
