  • 1 lb Italian sausage (mild or hot, sliced into 1/2-inch pieces)
  • 1 tbsp olive oil
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 large onion (sliced)
  • 2 cloves garlic (minced)
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup water or chicken broth
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat olive oil: Heat olive oil in a large skillet over medium-high heat.
  2. Cook sausage: Add the sliced sausage and cook for 5–7 minutes until browned. Remove and set aside.
  3. Cook peppers and onion: In the same skillet, cook peppers and onion for 6–8 minutes until softened.
