- 1 lb Italian sausage (mild or hot, sliced into 1/2-inch pieces)
- 1 tbsp olive oil
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 large onion (sliced)
- 2 cloves garlic (minced)
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup water or chicken broth

Instructions
- Heat olive oil: Heat olive oil in a large skillet over medium-high heat.
- Cook sausage: Add the sliced sausage and cook for 5–7 minutes until browned. Remove and set aside.
- Cook peppers and onion: In the same skillet, cook peppers and onion for 6–8 minutes until softened.
- Add seasonings: Add garlic, oregano, red pepper flakes, salt, and pepper. Cook for 1–2 minutes.
- Combine ingredients: Return sausage to the skillet, add water or broth, and simmer for 2–3 minutes.
- Garnish and serve: Garnish with parsley and serve hot.
