Description

These Sausage, Egg, and Cheese Breakfast Roll-Ups are a delicious and satisfying way to start your day. Perfect for breakfast or brunch, these tasty roll-ups are easy to make and can even be prepped ahead of time. With a flaky crescent roll exterior and a savory filling of scrambled eggs, savory sausage, and melted cheddar cheese, these roll-ups are sure to become a family favorite.

Ingredients

Scale

Crescent Roll Dough:

  • 1 can (8 oz) refrigerated crescent roll dough

Scrambled Eggs:

  • 4 large eggs
  • 2 tablespoons milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon butter

Filling:

  • ½ cup cooked breakfast sausage (crumbled)
  • ½ cup shredded cheddar cheese
  • 2 tablespoons chopped chives or green onions (optional)

Additional:

  • Nonstick cooking spray

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F and line a baking sheet with parchment paper or spray with nonstick cooking spray.
  2. Prepare the Eggs: In a small bowl, whisk the eggs, milk, salt, and pepper. Melt the butter in a skillet over medium heat, then add the egg mixture. Scramble until just set, then remove from heat.
  3. Assemble the Roll-Ups: Unroll the crescent dough and separate into 8 triangles. On each triangle, place a spoonful of scrambled eggs, some crumbled sausage, and a sprinkle of shredded cheese. Roll up the dough from the wide end to the point, enclosing the filling.
  4. Bake: Place roll-ups on the baking sheet and bake for 12–14 minutes or until golden brown.
  5. Serve: Let cool for a few minutes before serving. Garnish with chopped chives or green onions if desired.

Notes

  • You can prep the filling ahead of time and assemble in the morning.
  • Substitute bacon or chopped ham for the sausage, or add sautéed veggies for variety.
