- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon tomato paste

- 1/2 teaspoon black pepper
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 1 cup frozen mixed vegetables (peas, carrots, corn)
For the Topping:
- 2 cups shredded cheddar cheese
- 1 (28 oz) bag frozen tater tots
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Cook the Meat: In a large skillet, cook the ground beef or lamb until browned. Add onion, garlic, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Sprinkle flour, stir in beef broth, and add frozen vegetables. Simmer until thickened.
- Assemble the Casserole: Transfer the meat mixture to a baking dish, top with half of the cheese, arrange tater tots over the filling. Bake until golden and crispy.
- Final Touch: Sprinkle remaining cheese over tots, bake until melted. Let cool slightly before serving.
Notes
- Make it ahead and refrigerate unbaked for up to 24 hours.
- Swap ground turkey or chicken for a lighter version.
- Add a sprinkle of fresh parsley for garnish if desired.
