These delightful Shrimp Rolls on Brioche Buns are a perfect blend of succulent shrimp tossed in a creamy, flavorful dressing, nestled in buttery brioche buns. This easy-to-make recipe is ideal for a quick and satisfying meal.

Main Ingredients:

  • 1 pound cooked shrimp, peeled, deveined, and chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Old Bay seasoning

Add-ins:

  • 2 tablespoons finely chopped celery
  • 1 tablespoon finely chopped red onion
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste

For Serving:

  • 4 brioche hot dog buns
  • 1 tablespoon butter (optional, for toasting)

Instructions

  1. In a medium bowl, combine the mayonnaise, lemon juice, Dijon mustard, and Old Bay seasoning.
  2. Stir in the chopped celery, red onion, and parsley. Add the chopped shrimp and gently fold until evenly coated. Season with salt and pepper to taste.

  3. If desired, lightly butter the insides of the brioche buns and toast them in a skillet over medium heat until golden.
  4. Spoon the shrimp mixture into each toasted bun.
  5. Serve immediately, optionally with lemon wedges or a side of chips.

Notes

  • For a lighter version, use Greek yogurt in place of some or all of the mayo.
  • You can also add a dash of hot sauce for heat or diced pickles for tang.
