- 1 tablespoon lime juice
- 1 to 2 tablespoons minced pickled jalapeños
- 1/4 teaspoon salt
Instructions
- Prepare the Chicken: Heat olive oil in a large skillet over medium-high heat. Season the sliced chicken with chili powder, smoked paprika, garlic powder, salt, and black pepper. Add the chicken strips to the skillet and cook for 5 to 6 minutes until fully cooked and lightly browned. Remove the chicken and set aside.
- Sauté the Vegetables: In the same skillet, add the sliced red and green bell peppers along with the sliced onion. Sauté for 3 to 4 minutes until the vegetables are slightly tender but still crisp.
- Make the Jalapeño Verde Sauce: While the vegetables cook, combine sour cream, mayonnaise, lime juice, minced pickled jalapeños, chopped cilantro, and salt in a small bowl. Mix till smooth and well blended.
- Combine Chicken and Vegetables: Return the cooked chicken to the skillet with the sautéed peppers and onions. Stir well to combine all the ingredients evenly.
- Warm the Tortillas: Heat the tortillas in a separate pan or microwave until warm and pliable, ready for assembling the fajitas.
- Assemble the Fajitas: Spoon the chicken and vegetable mixture onto each tortilla. Drizzle generously with the creamy jalapeño verde sauce and sprinkle with shredded cheddar or Monterey Jack cheese.
- Serve: Serve the fajitas immediately while warm to enjoy the full flavor and textures.
