Beef Stew:

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 3 cloves garlic, minced
  • 1 large onion, chopped
  • 4 carrots, sliced
  • 3 celery stalks, sliced
  • 3 medium potatoes, peeled and diced
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 tablespoons olive oil


Instructions

  1. Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Brown the beef cubes in batches, about 2–3 minutes per side. Transfer the browned beef to the slow cooker.
  2. Add Ingredients: Add the chopped onion, garlic, carrots, celery, and potatoes to the slow cooker.
  3. Prepare Broth: In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, salt, pepper, thyme, and rosemary. Pour the mixture over the beef and vegetables in the slow cooker.
  4. Cook: Cover and cook on low for 8–9 hours or on high for 4–5 hours until the beef is tender and the vegetables are cooked through.
  5. Thicken: Mix cornstarch and water to create a slurry. Stir the slurry into the stew and cook on high for another 15–20 minutes until the stew thickens.
  6. Serve: Serve warm.

Notes

  • For extra flavor, deglaze the skillet with a bit of broth after browning the beef and pour it into the slow cooker.
  • You can also add peas or green beans during the last 30 minutes of cooking for added color and texture.
