Beef Stew:
- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 3 cloves garlic, minced
- 1 large onion, chopped
- 4 carrots, sliced
- 3 celery stalks, sliced
- 3 medium potatoes, peeled and diced
- 2 tablespoons cornstarch
- 2 tablespoons water
- 2 tablespoons olive oil
Instructions
- Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Brown the beef cubes in batches, about 2–3 minutes per side. Transfer the browned beef to the slow cooker.
- Add Ingredients: Add the chopped onion, garlic, carrots, celery, and potatoes to the slow cooker.
- Prepare Broth: In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, salt, pepper, thyme, and rosemary. Pour the mixture over the beef and vegetables in the slow cooker.
- Cook: Cover and cook on low for 8–9 hours or on high for 4–5 hours until the beef is tender and the vegetables are cooked through.
- Thicken: Mix cornstarch and water to create a slurry. Stir the slurry into the stew and cook on high for another 15–20 minutes until the stew thickens.
- Serve: Serve warm.
Notes
- For extra flavor, deglaze the skillet with a bit of broth after browning the beef and pour it into the slow cooker.
- You can also add peas or green beans during the last 30 minutes of cooking for added color and texture.
