- 1 pound Italian sausage (mild or spicy), casings removed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5-ounce) can diced tomatoes
- 1 (8-ounce) can tomato sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
Additional Ingredients:
- 1 (9-ounce) package refrigerated cheese tortellini
- 4 cups fresh baby spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Chopped fresh parsley for garnish (optional)
Instructions
- Brown the Sausage: In a skillet, cook Italian sausage until browned. Add onion and garlic, then drain grease.
- Combine Ingredients: Transfer sausage mixture to slow cooker. Add broth, tomatoes, sauce, spices. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- Add Tortellini and Spinach: Stir in tortellini and spinach half an hour before serving. Cook until tender.
- Finish the Soup: Add cream and Parmesan. Adjust seasoning. Serve hot garnished with parsley.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Refrigerate leftovers for up to 3 days; add extra broth when reheating to adjust consistency.
