Chicken Mixture:

  • 1 cup salsa
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Optional:

  • 4 oz cream cheese or 1/2 cup shredded cheese for a creamy finish

Instructions

  1. Add the Chicken: Place the chicken in the slow cooker.
  2. Add Ingredients: Layer black beans, corn, diced tomatoes, salsa, chili powder, cumin, garlic powder, salt, and pepper over the chicken without stirring.
  3. Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is tender.
  4. Optional Cheese: Add cream cheese or shredded cheese in the last 30 minutes of cooking, stirring until melted.
