Chicken:

  • 1.5 pounds boneless skinless chicken breasts

Sauce:

  • 1/2 cup low-sodium soy sauce
  • 1/2 cup honey
  • 1/4 cup hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic (minced)
  • 1 teaspoon fresh grated ginger
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup water
  • 1 tablespoon cornstarch

Additional:

  • 8 ounces cooked lo mein or spaghetti noodles
  • 2 green onions (sliced)
  • 1 tablespoon sesame seeds for garnish

Instructions

  1. Place Chicken in Slow Cooker: Put the chicken breasts in the slow cooker.
  2. Prepare Sauce: Whisk together soy sauce, honey, hoisin sauce, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes. Pour over the chicken.
  3. Cook Chicken: Cover and cook on low for 4-5 hours or on high for 2-3 hours until tender. Shred chicken.
  4. Thicken Sauce: Mix cornstarch and water, then add to the sauce. Return shredded chicken to the slow cooker and cook for an additional 15 minutes.
  5. Combine: Add cooked noodles to the slow cooker, toss to combine. Garnish with green onions and sesame seeds.
