Chicken:
- 1.5 pounds boneless skinless chicken breasts
Sauce:
- 1/2 cup low-sodium soy sauce
- 1/2 cup honey
- 1/4 cup hoisin sauce
- 1 tablespoon rice vinegar

- 4 cloves garlic (minced)
- 1 teaspoon fresh grated ginger
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/4 cup water
- 1 tablespoon cornstarch
Additional:
- 8 ounces cooked lo mein or spaghetti noodles
- 2 green onions (sliced)
- 1 tablespoon sesame seeds for garnish
Instructions
- Place Chicken in Slow Cooker: Put the chicken breasts in the slow cooker.
- Prepare Sauce: Whisk together soy sauce, honey, hoisin sauce, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes. Pour over the chicken.
- Cook Chicken: Cover and cook on low for 4-5 hours or on high for 2-3 hours until tender. Shred chicken.
- Thicken Sauce: Mix cornstarch and water, then add to the sauce. Return shredded chicken to the slow cooker and cook for an additional 15 minutes.
- Combine: Add cooked noodles to the slow cooker, toss to combine. Garnish with green onions and sesame seeds.
