Description

This Slow Cooker Jalapeño Popper Dip is a creamy, cheesy, and spicy appetizer perfect for parties and gatherings. Combining diced red bell peppers, jalapeños, salsa verde, bacon, and a blend of cheddar and pepper jack cheeses, this dip is cooked slowly until melted and bubbly, making it an irresistible crowd-pleaser.

Ingredients

Scale

Vegetables and Herbs

  • 1 cup red bell peppers, diced
  • 5-6 jalapeños, seeds removed, diced
  • 2 tablespoons parsley, finely chopped

Meat

  • 6 slices bacon, precooked and crumbled

Dairy

  • 2 cups cheddar cheese, shredded
  • 1 cup pepper jack cheese
  • 1 cup sour cream
  • 8 ounces cream cheese, softened

Other

  • 1 ½ cups Salsa Verde
  • 1 cup frozen corn
  • 1 teaspoon garlic powder
  • 1 teaspoon dill
  • ½ teaspoon cumin
  • ½ teaspoon red pepper flakes

Instructions

  1. Combine Ingredients: In a mixing bowl, assemble all the ingredients including diced red bell peppers, diced jalapeños (with seeds removed), chopped parsley, precooked bacon, salsa verde, frozen corn, garlic powder, dill, cumin, red pepper flakes, shredded cheddar, pepper jack cheese, sour cream, and softened cream cheese. Mix until well combined.
  2. Place in Slow Cooker: Transfer the entire mixture into a 3-quart slow cooker, spreading it evenly.
  3. Cook the Dip: Cover the slow cooker with its lid and cook the dip on low heat for 1 to 2 hours. Stir the dip every 30 minutes to ensure even melting and prevent sticking to the sides.
  4. Serve Warm: Once the dip is fully melted, bubbly, and heated through, switch the slow cooker to the “warm” setting. This keeps the dip at an ideal serving temperature for guests to enjoy alongside chips or bread.

Notes

  • For a milder dip, reduce the number of jalapeños or remove all seeds before dicing.
  • Use precooked bacon to save time and avoid excess grease in the dip.
  • You can substitute salsa verde with mild green salsa or tomatillo sauce for variation.
  • Serve with tortilla chips, crackers, or sliced baguette for best results.
  • Stirring every 30 minutes is important to avoid burning on the edges of the slow cooker.
