Chicken:
- 2 lbs boneless skinless chicken breasts
- 1 packet taco seasoning
Queso Chicken Mixture:
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup jarred queso dip (or homemade)
- 1/2 cup chicken broth
For Serving:
- 8–10 small flour or corn tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheddar or Mexican blend cheese
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Prep the Chicken: Place chicken breasts in the slow cooker. Sprinkle taco seasoning over the chicken.
- Cook the Chicken: Add diced tomatoes with green chilies and chicken broth. Cook on low for 6–7 hours or on high for 3–4 hours until tender.
- Shred and Coat: Remove chicken, shred, then return to the pot. Stir in queso dip until coated and creamy.
- Assemble Tacos: Fill tortillas with queso chicken. Top with lettuce, tomatoes, cheese, cilantro, and lime juice. Serve.
Notes
- For extra spice, add jalapeños or more green chilies.
- Use rotisserie chicken for a quicker option, adding queso at the end.
