For the ranch drizzle:

  • ½ cup sour cream
  • 2 tablespoons ranch seasoning mix
  • 2 tablespoons milk (to thin)

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C).
  2. Mix meatloaf: In a large bowl, combine ground beef, crushed crackers, eggs, onion, garlic, Worcestershire sauce, smoked paprika, salt, and pepper. Mix until just combined.
  3. Prepare filling: In a separate bowl, mix cream cheese, cheddar cheese, bacon, and chopped jalapeños.
  4. Assemble: Press half the meat mixture into a loaf shape on parchment. Spread the jalapeño cream cheese filling in the middle. Top with remaining meat mixture, sealing edges.
