Cookies:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Additional:

  • 16 mini Snickers bars, unwrapped
  • Extra sugar for rolling

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms.
  4. Assemble cookies: Scoop about 1 tablespoon of dough, flatten it in your hand, place a mini Snickers in the center, wrap the dough around it, roll it into a ball, and coat with granulated sugar. Place on the baking sheet.
  5. Bake: Bake for 10–12 minutes until lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
