Cookies:
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 12 fun-size Snickers bars (cut in half if large)
- Extra granulated sugar for rolling
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix wet ingredients: In a large mixing bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until combined.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet until a soft dough forms.
- Prepare cookies: Scoop about 1 1/2 tablespoons of dough, flatten it slightly, place a Snickers piece in the center, wrap the dough around it, and roll into a ball. Roll the ball in granulated sugar and place on the prepared baking sheet.
- Bake: Bake for 10–12 minutes or until the edges are lightly golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Chill the dough for 15 minutes if it becomes too soft to handle.
- You can use mini Snickers or caramel-filled chocolate pieces as substitutes.
