Cookies:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 12 fun-size Snickers bars (cut in half if large)
  • Extra granulated sugar for rolling

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large mixing bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until combined.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet until a soft dough forms.
  4. Prepare cookies: Scoop about 1 1/2 tablespoons of dough, flatten it slightly, place a Snickers piece in the center, wrap the dough around it, and roll into a ball. Roll the ball in granulated sugar and place on the prepared baking sheet.
  5. Bake: Bake for 10–12 minutes or until the edges are lightly golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
